QUINOA SALAD

Ingredients:

  • 60 gr boiled quinoa (white, black, red)
  • 20 gr boiled barley
  • 20 gr avocado cut in small dice
  • 5 gr chopped spring onion
  • 1 twig fresh oregano leaves
  • 6 leaves chopped peppermint
  • 1 gr chopped parsley
  • Some extra virgin olive oil
  • Lemon zest
  • 40 ml lime dressing
  • 4 baby green beans
  • 5 gr baby arugula salad
  • 30 gr avocado cut in slices
  • 3-4 slices of peach, slightly sauté or baked in the oven.

Mix all the ingredients from 1 to 11 in a bowl. When you serve in a plate garnish with the arugula salad, the sliced avocado, and the peach.

Lime dressing:

  • 2 limes, zest and juice
  • 80 gr honey
  • 60 ml apple vinegar
  • 60 gr mild mustard
  • 10 leaves fresh peppermint
  • 10 leaves fresh basil
  • 2 ice cubes
  • 240 ml extra virgin olive oil

Put the ingredients from 1 to 7 into a blender and mix in high speed. Then reduce the speed and add the olive oil slowly. It can be stored in the fridge for 5-6 days.
